    • High Gravity Brewing: High gravity brewing deals with various problems and limitations due to the large amounts of sugar yeast needs to eat. Learn about how certain tips and tricks can reduce fermentation timelines and ensure complete, fast fermentations.
  • 11:00 am: John Rowley of Rowley Farmhouse
    • Mixed Culture Fermentation: More Art than Science? Or More Science than Art? It Depends…: I will discuss my path into mixed culture fermentation, and the best practices I have found along the way. I'll also discuss live lactobacillus co-fermentations with sacchromyces to create more flavorful Berliner and gose style beers.

    • Basics of Yeast Bioengineering: Bioengineered yeast are becoming commonplace in the industry, yet many brewers, brewery owners, and bar staff lack an understanding of how and why yeast are being modified. This presentation will fill this void of knowledge by providing a rationale for genetic engineering, the science behind how genetic modifications are made, how safety is assessed and determined by the FDA, public perception, and strategies for communication and transparency with customers. The goal of this presentation is to equip you and your staff with the information needed to make an educated decision of whether or not to use bioengineered yeast and how to communicate your decision to customers and other relevant stakeholders.
