Back into (established) brewing at scale Nov 2013; One-time partner in a new regional startup brewery which went on-stream in early 2012 equipped with world-class equipment. Departed after 18 months, once brewery was at steady state, with responsibility of developing/launching initial portfolio of beers including two seasonal brews. Responsibility for $5.5million CapEx budget prep and all engineering and tech decisions germane to production as a closed Miller Beer Distributor building was converted into a brewery with elevated tiled floors and stainless steel drains and all appropriate infrastructure installation.. My responsibilities included boiler selection, compressed air plant and refrigeration plant sizing, and all process equipment selection and procurement, as well as system integration and hygienic design. Brewhouse sizing & spec incl endosperm mashing, husk transform, hopjack selection, decoction mash kettle and pdx wort boiler engine, unitank/BBt sizing & spec, stainless steel route network from Unitanks to filter/centrifuge cellar and route 2 from there to BBt; selection of all packaging and lab hardware. Novel approaches, such as not using diatomaceous earth but instead a refurbished Westfalia centrifuge followed by cellulose pad filtration, the use of single stainless steel glycol reservoir with constant chiller recirc via side stream, and carefully-selected refurb. used hardware made for technical exploration space & novel beers.
