  • 1.  Yeast Strain - Strawberry Jam Character?

    Posted 04-21-2023 15:17

    Hi Brewers,
Do any of you have a recommendation for a Yeast Strain that will create a strawberry jam like characater in a brown ale?
    Thanks!

We've used Timothy Taylor (A-69 I believe) from BSI in our English styles to impart a little bit of a jammy character alongside hops intended to complement that character. We've used First Gold and Triple Pearle shooting for generating something with a bit of an orange marmalade character in our dark mild specifically, and that seems to have worked well. It's subtle but there. Maybe an english strain like TT with some Belma or Barbe Rouge would get you in the ballpark? It will be lower on the intensity scale though, so might not be right for the project if you're looking for a strong and dominant strawberry jam character.

Hi Dan - To my taste buds, the WLP029 Kolsch gives off strawberry notes when fermented at elevated temps >70F. Keep on brewing.

I once tried a beer fermented with WYeast1450 ("Dennys Favorite 50") that had a huge strawberry jam aroma and flavor.  It almost tasted like they had added flavoring, but the brewer swore  that it was only traditional ingredients and the fruit character came from the yeast.

Thanks to all of the generous brewers that responded to my yeast question.
    Give me much to consider.
