5:15-6:00 - Technical Presentation - Erik Kotewa - Owner of Hallowed Hops Farm, is an economist and resilient hop cultivator who will share insights from a decade of navigating the Illinois brewing industry through a transition to biological farming methods.

6:15-6:45 - Technical Presentation - Matt Riggs - 5th generation farmer and 1st generation brewer from Central Illinois. He and his brother, Darin, founded Riggs Beer Company back in 2016 in order to add value to their small family farm's grains.

7:00-7:45 - Technical Presentation - Jeff Gustafson - owner of Brothers Beer & Bourbon in Sunset Hills, MO, as he shares what truly influences an operator's decision to give a craft brewer a tap.
