  • 1.  Sodium Metabisulfate and Potassium Sorbate Additives

    Hey everyone,

    Lately, we've been using our standard dosing of these additives while finishing the cellaring process for our beers prior to distribution. However, for some reason, there have been some issues regarding overcarbonation issues despite hitting our numbers prior to packaging. We are using yeasts without the STA1 indicator, but is it possible that the yeast from the manufacturer is becoming resistant and we need to up our dosing? Are there any resources that can explain this further.

    Hi Michael, 

    If you haven't done so already, I would look at the yeast on plates to rule out contamination of and strain purity. WLN, LCSM, and UBA is a good place to start. 
    What strain background is it?
