TECHNICAL PRESENTATION
Kata Young from Clean Wisconsin has been working with farmers, researchers, and end users (especially breweries) for at least the last year to figure out what needs to happen to make Kernza a viable grain to grow and process in Wisconsin. Clean Wisconsin's perennial crops program was recently awarded a Daybreak Grant that will hopefully allow Rooster Milling in East Troy to install a production-scale steam flaking operation - which will not only unlock the yield potential of Kernza for brewers in the short term, but will also create a source flaked adjuncts from all sorts of locally-grown grains.
