  • 1.  Lauter Tun Rake Speed Survey

    After searching the most powerful search bar in the industry, I didn't find what I was looking for in terms of what some people are running their fancy rakes at.  I've been to A LOT of breweries and with some of the bigger ones, one thing that always stuck with me is that those with the big, more efficient lauter tuns are run very differently than so many questionable combi mash/lauter tuns (for good reason).  All those big lauter tuns are running their rakes at speeds at rather than RPMs, MPRs (Minutes Per Revolution).  I'm hoping to get a survey going of those that have dedicated lauter tuns and know how to get most efficiency out of them with the speed you're running them.  I know the ability to make tiny cuts with height adjustment is a huge part of keeping a low and consistent differential pressure, so if you have input regarding that with speed, please add, especially if you're doing so manually rather an automated.  If you have any caveats to your standard speed, feel free to share.  And for consistency, if your speed isn't set by the most outer knife or lifer, please specify. 

    I was going to text or email a couple of people, but thought this could be helpful to others.  What drove this is how I've run into issues with smaller brewhouse manufacturers not using a different gearing for their rakes and just slap their combi motor and gearbox on a dedicated lauter tun.  I'm going to be buying a brewhouse here in the future and making sure if I buy new, it's going to be done right.

    Why, we were just discussing this. We have an injector-fed water acidification unit that failed and were manually dosing our acid into the mash/lauter tun. With each addition (every 15 minutes), we would spin the rakes. We discovered an increase in yield. Now the injection system is fixed, but we still spin the rakes. This has led to discussions of methodology of using rakes for better efficiency. We have decided to test out different rake speeds and/or start/stop frequencies. I would love to hear what others have come up with. I bet the mash press folks are just shaking their heads.

    Hi Adam,

    I spoke with one of our senior brewers and this is what he told me. We run our lauter tun between 2 and 5 Hz. The rake speed must increase as the lauter rate increases, otherwise water channels will form and your last runnings will be very low Plato. Additionally, temperature is a factor in determining rake height. If we mash out at a low temperature (ie, 150F), the rakes must be lowered gradually into the grain bed due to the viscosity of the liquid. If we mash out at a high temperature (ie, 170F), the reduced viscosity allows us to immediately lower the rakes to about 50% of the grain bed height. This also helps reduce the time it takes to complete the lauter.

    This is a great subject.

    To my understanding although I'm not an expert, The speed you need cannot be determined as a rule good for everyone. Every lauter is different and I feel you would get better data in calling folks that have a similar lauter tun than you and question their efficiency and compare it to the speed of their rakes.

    This having been said, I've read somewhere that rakes must not go faster than 1.5 meter / min, but cannot recall where I read it. This speed works for us, as we get clear wort, and above 90% efficiency in most beers. I know that there is many different ways to calculate efficiencies, but we did some trials with no rakes running and lost about 5% of efficiency with the same calculation, although wort was more clear.

    Thanks for the reminder about that episode!  It's been a while since I listened to it.
    For a quick reference for everyone else, Travis Audet confirms AB is running their rakes around 22 minutes per revolution.  I have a friend at one of the AB facilities that also confirms this super slow rate.

    As slow as ours goes is .3RPM, so that's what we run at.  Other places I've been have been as slow as .08RPM, for the same reason.

    The issue is the linear speed; how many feet per second. If your outer rakes are 10 ft apart, they trace a 10 x pi circle each turn. 3 rpm is about 90 fps.
