    Hello, 

    The CFIA has recently added a new labeling requirement for beer that states beer can contain no more than 4% by weight of residual sugars - see inspection.Canada.ca/food-labels/labelling/industry/alcoholic-beverages/Eng/1624281662154/1624281662623?chap=8

    How do you calculate the residual sugar in beer? Can you just use the apparent extract and report that number?

    Hi Rachael - from what I've been able to find, the CFIA residual sugar definition is limited to mono- and disaccharides, so it's not really as straightforward as the apparent extract. My understanding is that that most standard beers will have negligible residual sugars, and this will apply more to any sugars added that aren't fermented (for example, a radler).

    I have reached out to CFIA in the past, here's the response I received:

    As indicated in the Definitions portion of the Labelling requirements for alcoholic beverages section of the Canadian Food Inspection Agency's (CFIA) Food Labelling for Industry tool (ILT), residual sugars are sugars that are still present in beer after the fermentation process has been completed. Subsection B.01.001(1) of the Food and Drug Regulations (FDR) provides the following definition for the term sugars: "means all monosaccharides and disaccharides". This definition does not include polysaccharides.

     

    While most beers have a low level of residual sugars, the 4% limit was established to take into account various beer styles. Targeted sampling by the CFIA and Beer Canada (a voluntary trade association of over 40 brewers) indicated that most beers are below the 4% limit with the exceptions being beer with juice blends and some barley wines.

    No, apparent extract and residual sugar (RE, residual extract, etc.) are two different things. Ae is used in reference to fermenting beer, because the alcohol will interfere with the actual sugar content, as alcohol is lighter than water, and hydrometers are calibrated to water. RE is the actual extract in the beer and has a correction factor for the amount of alcohol.
    You can google equations that can calculate RE using original and final gravity. There's also a document on the MBAA site with useful calculations, including RE. 

     Real Extract = [0.1886x Original Extract (OG)] + [0.8114 x Apparent Extract (FG)] in degrees Plato (°P).

    for your info; 
    re : the requirement for beer to contain no more than 4% by weight of residual sugars in the final product offered for sale to consumers.
    For testing purposes, sugars would include all monosaccharides and disaccharides.

    To clarify RE residual Extract is non-alcohol solids. This link allows RE calculation <https://www.omnicalculator.com/food/alcohol-by-volume> and for the record,  is based by an extensive analysis which is a more updated calculation than mentioned in other posts.

    Regulations Amending the Food and Drug Regulations (Beer): SOR/2019-98

    Maximum percentage of residual sugars

    The standard requires beer to contain no more than 4% by weight of residual sugars. Residual sugars are sugars (as defined in the FDR) that are still present in beer after the fermentation process has been completed. This provides an objective measurement to distinguish beer from malt-based beverage products (e.g. coolers), which are generally sweeter and associated with a percentage of residual sugars above the 4% by weight limit.

    While most beers have a low level of residual sugars, the 4% limit was established to take into account various beer styles. Targeted sampling by the Canadian Food Inspection Agency (CFIA) and Beer Canada (a voluntary trade association of over 40 brewers) indicated that most beers are below the 4% limit with the exceptions being beer with juice blends and some barley wines.

    Products not meeting this requirement could be reformulated to lower the residual sugars below the limit to meet the beer standard or be sold as an unstandardized beverage with an appropriate common name (e.g. "blend of beer and grapefruit juice").

    Calculating Residual Sugars;
    Testing for RFE (Residual Fermentable Extract) can be done via a std. method (ASBC) after fermentation is complete; (very similar to Limit Fermentation testing).
    but you will be within 0.1% to 0.5% residual, typically.
    And, this residual is not likely to be only the "simple" mono and di-saccharide sugars.

    If you are adding sugars/juices after fermentation for sweetness/flavour; then you should have a pretty good idea of just how much sugar you are adding.
    Therefore, legally, you only need to "worry" about testing if you are pushing the 4% simple sugars limit.

    Labs that do not regularly do this work tend to be inconsistent; so be careful if reaching out to have your beers tested for you.

    Hi Rachael and everyone,

    One distinction may help clarify the discussion: apparent extract, real extract, residual fermentability and residual sugar are not interchangeable measurements.

    Apparent extract is density-based and is affected by the presence of ethanol (as pointed out earlier). Real extract corrects for alcohol, but it still represents total non-volatile extract, including dextrins, proteins, minerals, organic acids and other material (so way more than you are concerned with). Therefore, neither measurement directly shows how much mono- and disaccharide sugar remains in the finished beer.

    An ASBC end-fermentation test is very useful for determining residual fermentability, but it is still a biological measurement dependent on the yeast and test conditions. It may not account correctly for non-fermentable disaccharides such as lactose, even though lactose is chemically a sugar.

    For the Canadian 4% by-weight requirement, the most direct analytical approach would be to quantify the relevant mono- and disaccharides in the finished product after all additions have been made and then express their total as % by weight. HPLC can do this, and a validated selective enzymatic method could provide a faster at-line alternative.

    "Sugar" is defined. I believe that this CFIA labelling concept follows the long-standing definition that NFT (nutrition facts tables) refer to.

    Heavily adding simple sugars shifts the beverage out of "beer" into refreshment beverages.

    Sugars

    Sugars include all mono- and disaccharides, including sucrose, fructose, glucose, glucose-fructose, maltose, etc. Sugars must be declared in the Nutrition Facts table as "sugars" and expressed by their total value in grams per serving of stated size, and as a percentage of the daily value per serving of stated size [item 11 in table following B.01.401, FDR]. Calculation of the % daily value is based on the Daily Values for sugars in Part 1 – Daily values for macronutrients and sodium in the Table of daily values. Daily values are given for different age groups. When using the table, be sure to use the appropriate column.

    Thanks for keeping the discussion going, Alex and Keith-breaking down the exact regulatory definition of simple mono- and disaccharides vs. total solids is key here.

    Moving from the analytical definition to actual brewhouse practice, I'd be really curious to hear how people on the floor are navigating this day-to-day.For those managing production in Canada (or US facilities exporting north):

    Operational Pain Points: Is meeting the 4% limit 40 g/L still an active challenge for your seasonal or specialty lineups (like pastry stouts, heavily fruited sours, or barleywines), or have most plants adapted their target gravities by now?

    Brewhouse Adjustments: What recipe or process levers have proven most effective for keeping border-case beers safely under 4% without stripping body or flavor? (e.g., mash tweaks, yeast strain selection, lactose dosing rates, or fruit addition timing).

    Documentation & Compliance: How is your QA team tracking and documenting true sugar levels before submitting samples to provincial boards like the LCBO or AGLC? Are most relying on external HPLC panels, mathematical estimates from Real Extract, or at-line enzymatic testing?

    US / Cross-Border Perspective: For American brewers distributing into Canada-or those tracking the TTB's recent focus on nutritional disclosures and "Alcohol Facts", are you running into similar testing/documentation hurdles when exporting, or preparing for tighter sugar reporting domestically?Would love to hear how different facilities are balancing recipe integrity with regulatory compliance in practice.

    Good questions. I'd imagine that there are a wide range of responses possible.

    The "beer definition" philosophy was to retain "Beer" as close to historical "Common Beer" as possible; balanced versus modern and historical outliers. If you are over 4% Simple Sugars; then you are likely to be doing something "Beyond Beer" that would confuse the average consumers. That could be viewed as an unstandardized beverage which would require labelling with an appropriate common name (e.g. "blend of beer and grapefruit juice").

    Since many lager yeasts will be highly flocculant and tending towards leaving some small residual unfermented maltose, for example; this would encourage brewers to know their products and processes (potentially more challenging for brewers using a wide range of yeasts that they are not fully conversant with).

    Otherwise; just don't add simple sugars beyond a reasonably "safe" level of perhaps 3.5% ???

    Non-fermentables such as dextrins, et al; would mostly tend to NOT be "Simple Sugars"; so this issue would only tend to affect products where brewers are adding Simple Sugars; so it's not really a case of adjusting target gravities nor affecting the more complex residuals that support body and flavour.

    For those at risk via the addition of Simple Sugars; there are probably users of any and all analytical methods you note.
