    We are planning on using cocoa nibs after primary fermentation. Any tips on sterilizing before addition?

    Brian ,

    Hot side a 5 gallon bucket with 185 F water.
     Place your nibs in a Muslin bag , tie off with a string or fishing line etc... 

    Just before you are ready to add to FV dunk the bag of nibs in the 185 F bucket of water  .. I do 2 quick dunks and then straight into the FV. 

    Tie off and you are all set.

    Hey Brian, 
    Our method to adding Nibs to FV is to sani a muslin bag, wring it out, quickly dump our nibs inside from it's packaging,  tie it off and into the FV it goes. 
    We don't really do anything to the nibs themselves -it's worked fine for our purpose. Hope this help.

    I call your attention to a mention of cacao nibs in Mastering Brewing Science ISBN 978-1-119-45605-6. p442. Cacao nibs can harbor heat resistant spoilers that survive standard pasteurization.

    Sorry if this is to late, but what we will do is roast our cocoa nibs first before adding to the fermenter (in our case is actually a recirculation tank), this will help with sterilization, and bring out some of the flavour characteristics of the nibs. Just be careful not to burn them, generally doing it at 325 F in the oven for 4 mins or so does the trick. Put them into the sterilized muslin bag and should be good to go.

    We use cheap vodka.  Put the nibs in a bag in a bucket, dump the vodka all over them, soak them for a few minutes and pull out and recirculate through a hop back.
