  • 1.  Best chemicals for bar glass washer

    Hi All,

    Trying to elevate the beer service across our restaurant portfolio. Figured I would start with the equipment before having to bang my head against a metaphorical wall to get bartenders to buy into proper service.

    Most of our venues are high volume and have a low temp conveyor style washer. I know a high temp glasswasher is best but switching out washers is not currently on the table.  I am wondering if those of you that have dealt with restaurants/taprooms have products that performed better than others. Currently Ecolab supplies our chemicals. washing detergent is a caustic based, which seems fine to me. Sanitizer is a iodine/phosphoric acid sanitizer (Mikroklene). Wondering if there are better sanitizers for achieving beer clean glassware.

    I've used products from BeviClean and can say that they work well--though the systems I worked with were manual. I will add that it could be worth your time to reach out to Oliver Meinhold--he knows a ton about cleaning products for beer glassware and would be able to advise you. I'm unsure of his current contact info, but a post on ProBrewer from 2022 has it as Oliver.meinhold@vincitgroup.com.

    Hi Steward:

    Nassim referenced an in-sink glass washer (Bevi Felix) which we distribute in the United States and Canada for BeviClean.  However, this is a hand washer and uses different chemistry than a commercial dishwasher.  We do carry a line of institutional products for kitchens, and I would be happy to send you some information.

    On the sanitizer side of things, we are always limited by our friends from the EPA.  Almost all dishwasher sanitizers are either Iodine based, or Quaternary Ammonium Compound based. Both products have a tendency to kill head retention, and more and more breweries and bars install glass rinsers to reduce the effect on the head of the beer.  The glasses should be clean prior to sanitizing and the sanitizer is applied to kill any bacteria that could be spread via the glassware (Herpes simplex, Covid, flu, etc.). In the US, you are mostly not allowed to rinse the sanitizer but have to store your glassware without rinsing.  Thus, the rinser prior to filling the glass.
