  • 1.  Ascorbic acid usage

    Hello all,

    The hop flavour in our hopped cider isn't lasting as long as I would like it and as long as I usually get in beer.  I understand many breweries use ascorbic acid in their IPAs to improve shelf life.  I can't find many resources on using ascorbic acid.  We already are using sulphites.  I am hoping for some insights on ascorbic acid use to improve hop shelf life.
