I'll get the ball rolling on questions for the 25th...
What recommendations are there for oxygenation of wort in a brewery that does not have access to a DO meter? (other than "go buy one" of course!) I know that a venturi injector can be more efficient than the small carb stone set-up many small brewhouses come with.
Is a venturi injector a good option when DO monitoring is not available? What are the best-practice recommendations when using a venturi or stone to infuse oxygen?
And I suppose we could expand this for those who may have a DO meter - what are the recommended DO levels for an average wort? Does that number slide according to starter vs pitchable qty or amount pitched?

Lets try out the new district forum!
We have our next meeting scheduled for the 25th and featuring a technical round table on quality, especially packaging quality. We will have representatives from breweries of all sizes to answer questions and to discuss some of the features of their quality programs. For those of us attending the OCBA meeting this Tuesday, you will hear the BA Quality Ambassador Dick Cantwell talk about the beer quality imperative. Our meeting in 3 weeks should give all attendees the tools to make a more effective QA/QC program a reality.
