Dr. Keith Villa of Ceria Brewing Company will be speaking on NA Beer Production.
Keith Villa is a brewmaster, author and inventor from Arvada, Colorado.
Keith graduated with an undergraduate degree in Molecular Biology in 1986 from the University of Colorado in Boulder. Keith then earned his Doctorate in Wetenschappen (Science) with a brewing specialization from the University of Brussels in Belgium.
In 1995 Keith created Blue Moon beer at the Sandlot Brewery at Coors Field, located in Denver, Colorado. An operating unit of Coors Brewing Company, Blue Moon was one of the first nationally available American craft beers and is now sold in over 20 countries worldwide. In 2015, Beverage World magazine listed Keith as number 19 of “50 Beverage Disruptors: Individuals whose innovative impact has changed the status quo in the beverage world.” Keith continued to create new products for Coors and help build the Blue Moon brand until his retirement from Coors in 2017.
In 2018 Keith disrupted the beer industry again when he and his wife, Jodi, co-founded Ceria Brewing Company, offering cannabis-infused, alcohol-free beers sold through recreational dispensaries in Colorado and California. These beers became a part of the permanent collection of the History Colorado Center as Colorado’s first cannabis beers. In 2021, Keith authored the book “Brewing with Cannabis, Using THC and CBD in Beer”, which was published by the Brewers Association.
In 2020, due to Federal illegalities of cannabis, Keith and Jodi decided to pivot to selling only non-infused alcohol-free beers nationwide. In order to make Ceria’s beers alcohol-free (0.00% ABV), Keith developed a novel technology of producing totally alcohol-free beers, with no trace of alcohol. Keith holds a patent for the production of Ceria’s alcohol-free beers, and has pending patents for the rapid production of fermented beverages and for a cleanup technology which takes the “skunkyness” out of light-struck beers and the “dankness” out of cannabis infused beverages.
